The cherry - forbidden fruit in the neighbor's garden and eternal symbol of sensuality. Historically, it was relatively late use in the flame cutting of domestic distilleries. For a long time grape and grain were used as the basis of hard alcohol there primarily. These raw materials were available in large quantities and bestowed the distilleries a high yield. The small cherries, however, were costly to process and provided a relatively low yield. Only the progressive mechanization in the 19th century and easier availability of fruit helped the fruit brandies breakthrough. Especially in the border zones of the Black Forest thrive nowadays high-born sweet cherry trees, whose fruits are the ideal foundation of high-quality cherry fires.
The Allgäu distillery can look back on a long tradition. A whole century that has been used by the distillery in order to perfect the art of distilling resistant. At its centenary in 2014, the Allgäu distillery surprised its customers with the special edition "Old clemency". Its classical fruit brandies used as basis. These were enriched with dried fruits and downstream for twelve months in the barrel. The result convinced all along the line: fine, round and mild taste with a minimum fruit sweetness. The positive response to this exclusive special edition was so large that it was decided to make it an integral part of the wide range of products. What started as an innovative taste experiment, became immediately became a classic. The Allgäu distillery proves that tradition and innovation can go hand in hand.
